Ackee and Saltfish Meal!
Ackee and Saltfish is the national dish of Jamaica and the Ackee itself is depicts as the national fruit of Jamaica. Picture of a Ackee and Salt Codfish dinner meal shown on the right consists of boiled dumplins made from plain flour, boiled green banana, boiled yellow yam, boiled pumpkin and boiled sweet potato. Ackee and Saltfish makes a tasty dish with plain rice or red kidney beans and rice. Ackee contains many important nutrients such as linoleic, palmitic, stearic acids are fatty acids that is found in the Ackee fruit. Green banana yellow yam and sweet potato is also very nutritious. Plain flour fried dumplins compliments a Ackee and Salt fish meal. In some Caribbean islands fried dumplins are with self-raisin flour and sugar.
Its a known fact that having a good solid balanced breakfast in the mornings keeps up your energy. Early morning breakfast makes you eat less and you become more productive as the day goes by. Shown in picture on the right is a typical English breakfast sold mostly in cafes throughout London. An English breakfast shown in picture on the right, consists of 4 slices of juicy grilled tomatoes, 1 fried egg, 2 rations of bacon and baked beans, with two thick slices of crusty bread and a hot mug of tea. Each cafe make up their own version of what an English breakfast should be. An English breakfast can be made up of 2 large sausages, 2 bacon rations, eggs which can sometimes be serve as scramble eggs depending on the customer's request. Some cafe in London serves up bangers and mashed, while others serves up a plate of black pudding, eggs, bacon, sausages, fried bread with mushrooms and baked beans!
The simple way of making fried dumplins/Johnny Cakes is to use self-raisin flour, salt and water. Use 2 or 3 cups of self-rising flour, add two tea spoon of salt, mix the self-rising flour and salt to blend together. You then proceed to kneed the dough by adding small amounts of water until the dough is ready. Break off pieces of the dough and roll them into a ball in the palm of your hands the press the centre of the dough with your thumbs just to slightly flatten dough. You now need about 1 cup of cooking oil. Dumplings should be fried for 3 minutes on each side on a slow fire in hot cooking oil. Fried dumplings are a favourite of Jamaicans, and can be serve with, fish, callaloo, ackee, saltfish, meat or even corned beef slices at breakfast time.
